hello i think i know exactly why you will lose your steam. two reasons basically.
1) lack of base conditioning. overcome this by cross training. get running, both slow pace and build up your miles and intervals/fartlek to improve your 'ceiling' i.e. this will allow you to work harder longer. not just running either. circuit training is excellent and also do some weights as well as your normal training sessions.
2)sparring is a stressful activity as its very intense... plus you tire yourself with nervous tension. so practice more and when u have sufficient training built up, compete. this is the true test of all your training.
As well, take into consideration your nutrition and hydration levels as well.
Like any high performance athlete you need to be maintaining a sufficient caloric intake and keep a carbohydrate-electrolyte drink handy to sip on to help replace fluids and keep your energy up. A 2% loss in hydration has been reduce your performance up to 20%.
The previous answers contain some necessary things for training that you must do in order to have a good condition for combat. One more thing i heard in a Bruce Lee and Brandon Lee documentary (im pretty sure you know who they are if not then, Brandon Lee was the son of Bruce Lee).
Brandon Lee said that her would train to the verge of exhaustion, the stage when he could not exercise anymore. So practice, practice and practice so you increase your lactic acid tolerance and VO2 max.
