Could you do uphill running and lower body plyos on the same day?

Yes it is possible depending on the fitness level and the full training program for that week.

If you feel overly tired after doing the uphill run, monitor your recovery throughout the day. At least rest 3-5 hours before starting the plyometric exercises.

Just be careful of over-training or excessive fatigue which may lead to injury.

No, no, no. If you are training for a sport you would be training ONE aspect of your fitness requirements i.e. speed, agility, endurance, strength etc. Uphill running either sprints or long repetitions are not condusive to agility training.

Note that the topic has also been placed in the football category so muscle stamina and strength is also required. The uphill running isn't just for speed and agility purposes.

Hence why he'd like to add the plyometrics too.

Check concurrent training article on this PP web. Yes, you can train endurance and strenght at the same day, for example, but the first thing first; you can see it is possible for endurance atheletes to train a "speed reserve" (anaerobic).

Then you need to define your training targets.
