I would like to know whether protein will bring benefits to the performance of children 8 to 15. If yes, which type of protein should they use?

Yes it will bring benefits, and is required - But only as part of a good balanced and normal diet of regular meals eaten at the right times. Time the meals to use them as recovery
The only thing to consider outside of normal diet for kids really is hydration.
