I am not a wrestler myself but i find that visualisation is a really helpful technique. I guess for wrestling you could visualise all the different ways your opponent could come at you and then visualise what you would do to counter those attacks.

I found that when under pressure in a match that if I could control my breathing I could maintain better focus and not slip into a panic mode. Shorter, shallow breathing (hyperventilation) triggers the mind to panic.
So training an athlete who is fatigued, as when you have your athlete encounter many opponents in succession during training, have them focus the surroundings and control their breathing at the same time. Slower and controlled. When you can control yourself, controlling the situation becomes easier.
Not too dissimilar to high intensity interval training.
This is one way to toughen the mind.

I find that if you get a good collar tie or hold on them, and start going upleft up downright down in a circle and have a blank face then they will get confused and then you can make your move and suprise him. if you are on top try to like put some part of him in an ucomfortable position and he will be easier to pin.
