I am a big fan of pancakes and although it's taken me several attempts over the years I'd like to think I have created the perfect one!I hadn't even realised that pancakes are actually an excellent post workout snack- they contain carbohydrates and protein, which is essential for post training recovery, and you can add any other ingredients you like to boost the nutritional content.
So, my prized pancake:
Firstly make up the standard pancake recipe, which includes:
- 110g plain flour - 2 eggs - 300ml milk- a little low fat butter.
- Heat the oven to 120ºC/ gas mark ½.
- Sieve flour into large bowl and add the eggs- whisk together.
- Slowly add the milk and then whisk your head off until everything is mixed together
- If you have time, leave to stand for about half an hour (if not it doesn’t matter).
- Stir well before you use the mixture.
- Add a small dab of low fat butter to a heated pan and swirl around
- Be patient when you add the mixture- you might lose the first pancake! (I am very impatient so I am not really one to talk)
- The thickness is up to you but I would make these ones reasonably thick to hold the filling
Once you have cooked the pancakes transfer them to the oven to keep warm while cooking the filling, which is just as easy:
- Pan Fry a diced chicken breast, seasoned with Cajun pepper, until cooked (5 minutes)
- Add chopped spring onion, red pepper, chilli, mushrooms and a touch of lemon juice and cook through (5-6 minutes.)
Once cooked spoon the chicken mixture into a pancake, sprinkle on some fresh coriander, wrap it up and that is a nutritionally packed, quick and tasty pancake! (You can also add a bit of crème fraiche if you like!)

I wouldn't recommend these as a post training recovery snack... at least not the first thing you eat.... the fat content will slow the recovery process.
Never use low fat butter either!!

Must admit I do like a good pancake... sadly not as healthy as yours sound though.
Martin, why would you not recomment the low fat butter?
