Tuna Bean Burrito

It contains all the necessary ingredients you need (protein/carbohydrates), tastes fantastic and it’s really really quick to make (so it’s perfect if you’re in a rush or can't usually be bothered to cook- like me!)

Ingredients, for two people:

  • Tuna x 2 Tins
  • 6 wholemeal burrito tortillas, warmed
  • Kidney beansx 1 Tin
  • Fresh Coriander (chopped)
  • 3-4 spring onions (chopped)
  • 1 red pepper (diced)
  • 2 Tbsp Lemon juice
  • 200g of cherry tomatoes (halved)
  • Light sour cream
  • Avocado

Method

  1. Drain the tuna.
  2. In a bowl mix the tuna, spring onion, red pepper and cherry tomatoes
  3. Drain the kidney beans and add to the mixture
  4. Add the lemon juice and stir in
  5. Add a small amount of the sour cream to act as a binder (add as much as you like)
  6. Season with salt and pepper and add the coriander
  7. Spoon the mixture in the centre of a warmed tortilla and wrap.
  8. Serve tuna burritos with avocado and sour cream.

You can add an optional salad if you wish, but I'm personally anti-salad!
