Omelettes are a great source of nutrition and are really quick and easy to make.

Ingredients:

  • 3 Medium-Small Potatoes- cubed
  • 3 Eggs
  • 2 tbsp Milk
  • 3 Spring Onions- chopped
  • Handful of Mushrooms- chopped
  • Small handful of Cherry tomatoes- halved
  • Half Red Pepper- chopped
  • 2 tsp Paprika
  • Pinch of salt & pepper
  • Low Fat Spread

Recipe:

  • Par-boil potatoes
  • Whisk the eggs and add the milk, salt, pepper and paprika- thoroughly mix.
  • Cook onions, peppers and mushrooms on a low heat in the low fat spread- 3 minutes
  • Add potatoes and cook through for 2 minutes- stirring to avoid sticking
  • Add egg mixture to pan
  • Use a medium heat to cook through- it will take a bit longer than a normal omelette due to the added ingredients
  • Use a fork to occasionally loosen the mixture to ensure it thoroughly cooks- do not scramble!
  • When the omelette is lightly browned on both sides, remove it from the heat and transfer to a plate.

I would only object to low fat spread. I use half olive oil half butter, there are enzymes in butter that aid digestion, i think its called tributyrin but i may be wrong..

i also like grated courgette in mine :)

That sounds delicious. I also like courgettes, Pippin... I've got a few plants growing at the moment actually, and there's a few weeny baby courgettes growing right now... I can't wait!

ahh that is exciting! sounds much like a farmers breakfast. these types of omelette are great cos you can put pretty much anythin in them (i like a bit of frozen creamed spinach too) or stuff you've found in the fridge! its nice with seeds on top too, for a crunchy bit of texture too :)
