Yes if you need to increase upper body strength along with selection of other exercises. You have to take in consideration for what you are training and why and how.
Dont need to dismiss every exercise. Some (like bench press) will have a use at some point in a traiing schedule/season.

I see bench press as a good foundation, but my understanding tells me the strength carry over to the field is verry little. I mean, someone who can bench 500lbs isn't going to be better than someone who can press 250lbs. All other things being equal.

No you are right. You dont test a players ability by bench press. It has it uses as i stated before but not as essential as 30metre sprint ability etc. Bench press will only serve to increase muscle mass/strength of the chest and arms. If this is required, then it is a viable exercise.
